Who Invented Pani Puri? History, Legends and the Story of Golgappa

A crispy little puri. A spoonful of filling. A splash of spicy, tangy water. Then, pop! The whole thing goes into your mouth at once. Pani puri is loved across India, but here is a tasty mystery: who made the very first one? The answer is not as simple as you may think.

Where Did It Begin?

No one knows for sure who invented pani puri. Some stories take us back to Magadha, an ancient kingdom in the area we now call Bihar. People there may have eaten a snack called phulki, made from small fried pieces of dough. Some believe phulki slowly changed over time and became something like today’s pani puri.

But there is a problem: historians have not found an old written record saying, “This person invented pani puri.” Its real creator seems to have disappeared into history, just like the last puri at a crowded food stall!

Did Draupadi Make It?

There is also a famous story connected to the Mahabharata. It says Kunti gave Draupadi a little dough and some leftover vegetables and asked her to make food for the Pandavas. Draupadi supposedly made small puris, filled them, and served them with tasty water.

It is a lovely tale, but there is no historical proof that this is how pani puri began. So it is best enjoyed as a legend, not a confirmed fact.

The Pani Puri We Know

The pani puri we eat today probably developed much later. One big clue is the potato, now one of its most common fillings. Potatoes came to India only a few hundred years ago, after traders brought them from faraway lands.

Over time, people in different parts of India added their own fillings, spices, and flavoured water. That is why we now have pani puri, golgappa, puchka, and other tasty versions.

So, who created pani puri? We may never know. But perhaps that mystery makes every crunchy bite even more fun!
